Il Borgo del Balsamico: a feminine gem in the Italian gastronomic landscape. The story of a passion that 15 years ago became a quality project about dedication and research into tradition. Cristina and Silvia Crotti grew up in a family of fashion entrepreneurs and they have made Traditional Balsamic vinegar their passion.
A project was born of this passion which develops and promotes not only Reggio Emilia Traditional Balsamic Vinegar but an entire range of everyday products which, in the space of a few years, came to be sold and used in the best shops and restaurants throughout the world.

The Azienda Agricola Bertinelli was founded in 1895, on the hills of Medesano, in the province of Parma.
For over 100 years, it has been producing milk and transforming it into the noblest of cheeses: Parmigiano Reggiano PDO. This is a unique cheese, which boasts of nine centuries of history and owes its success to naturalness, taste and excellent nutritional values that distinguish this cheese. The Azienda Agricola Bertinelli is still certainly a very artisanal reality: every day it produces a maximum of 20 wheels of Parmigiano Reggiano PDO. It is distinguished by extreme attention to details and continuous research, where experience, innovation and nature come together to produce cheeses of the highest quality, healthy and genuine.

Uniqueness of the Parmigiano Reggiano PDO Millesimato 24 months, proposed by the Azienda Agricola Bertinelli, is represented by the fact that it is produced with raw cow’s milk coming from cows that have given birth no more than 100 days.
This milk - better known as “early lactation” - has a significantly higher protein and calcium content and it is particularly suitable for production of hard cheeses. The Parmigiano Reggiano PDO Millesimato 24 months stands out for its sweetness and equilibrium: it is a velvety cheese, with a bouquet in which you can perceive hints of hay.
Company “La Fattoria di Parma Srl” was established in Parma by a family with 80 years’ experience in high quality deli meats and that has always believed in the extraordinary potential of its area of origin. All projects focus on the care for details and give rise to entrepreneurial choices aimed at increasingly advanced goals. Today, the company has 20 staff and a distribution network of 30 agents and has obtained the most important European certifications, like BRC, and has been recently certified BIO.
Strolghino is a salami made from a mix of lean mean that remains when producing ham. The production area is in the low lands around Parma. The trimmings used to prepare Strolghino are obtained during the boning and cutting of the pork haunches. The result is a mild and lightly flavoured salami to be enjoyed when matured 4/5 weeks.
The best part of ham with no stem and no bone is Culatta. Culatta is Culatello plus some rind, which is to say a product that classifies between Parma ham and Culatello. Like Culatello, Culatta is only the heart of the ham. And similarly to Parma ham, Culatta is left to age with the rind around it.
Although its production process is very similar to that of ham and Culatello, Culatta is unique and features a very different taste if compared to ham and Culatello.

of purple, surprising his bubble so fine and persistent, surprisingly its high acidity makes it so fresh and lively. It ‘s definitely a versatile and generous wine pairings in: from aperitif, meats, to fish. A wine of great character and amazing quality, it should be served at a temperature of 6°-8° C in order to exalt its characteristics.
