Air Dolomiti celebrates the festive season in style with delicious Italian dishes designed by three JRE Jeunes Restaurateur chefs; Aurora Mazzucchelli, Leonardo Vescera and Filippo Saporito, together with fine wines from the prestigious Marchese Antinori and Famiglia Cotarella labels
Italian tradition flying high for Christmas 2017 with Air Dolomiti, the Lufthansa Group’s Italian airline. To celebrate the festive season this year Air Dolomiti has teamed up with the JRE Jeunes Restaurateurs association to produce a menu concocted by three of Italy’s leading young chefs. From 21 December 2017 to 10 January 2018, passengers in Business Class will be able to enjoy all the magic of Christmas and the full flavour of Italy in a series of mouth-watering proposals designed by Aurora Mazzucchelli, Leonardo Vescera and Filippo Saporito. A taste experience through the best Emilia Romagna, Tuscany and Apulia have to offer.
Each chef has prepared a speciality to make every part of the day special: Aurora Mazzucchelli, owner of the Marconi Restaurant in Sasso Marconi near Bologna, who earned her first Michelin star in 2008, starts the day with a spectacular chocolate bread-cake and continues with a torta tagliatella served with orange marmalade at tea time. Leonardo Vescera, owner of Il Capriccio restaurant in Vieste, brings all the savour of the sea to lunchtime with his octopus carpaccio in orange zest, almond mayonnaise and black olive powder, while Filippo Saporito, chef from the Michelin-starred La Leggenda dei Frati restaurant in Florence, takes airline dining to a new level with his Cinta Senese pork meatballs in a yellow pumpkin cream garnished with toasted pumpkin seeds and accompanied by a savoury tart with sesame and red onions from Certaldo in a sweet and sour sauce.
All three chefs are members of the JRE Jeunes Restaurateus Association, founded in France in 1990, which now has a membership of over 350 restaurants and 160 hotels in 16 different European countries. The association aims to defend and promote high-quality, European gastronomy and foster young European talents.
And to ensure the Christmas spirit in full Air Dolomiti has renewed its partnership with two of Italy’s top wineries, with outstanding wines from the Marchese Antinori and Famiglia Cotarella wineries to complement its mouth-watering menus. Their wines will be served to all passengers on board, as well accompanying the special Christmas menu. A Christmas toast with a premium bubbly from the Marchese Antinori - Cuvée Royale Tenuta Montenisa, a glass of white wine with the Soente, Tenuta Montiano - Famiglia Cotarella (2016), or a full-bodied red with Marchese Antinori - Botrosecco, Tenuta Le Mortelle 2015.
The Antinori family have been making wine for over 600 years. Over an astounding 26 generations the family has always managed its estates personally, producing their wines with an eye to innovation, but with all due respect for tradition and the territory.
The Cotarella family started to produce their own wine in the 1960s, when Domenico and Antonio, who cultivated their vineyards in a medieval village in Umbria, opened their own winery.
