When it comes to food Florence has something for everybody. The most famous dishes include lampredotto, a hearty peasant dish made from part of the stomach of a cow, boiled and served with green sauce.
Another dish made with offal is tripe, served as a soup cooked with tomatoes and sprinkled with grated Parmesan cheese.
If, on the other hand, you prefer something slightly less challenging, you can opt for pappa al pomodoro, a sort of tomato soup served with toasted bread, or ribollita, which also has a toasted bread base and a mixture of cooked vegetables, the most typical of which is black leaf kale. For main dishes, the dish par excellence is Florentine T-bone steak, each one weighing at least 800 g and traditionally served rare.
